- 1/2 kilo pork (diced)
- 2 medium-sized onions
- 1 upo (bottle gourd or white squash)
- 1 head of garlic (about 10 small cloves or 7 large cloves)
- 2 tablespoon oil
- 2 cups of water
- 5 pieces of tomatoes (diced)
- 2 teaspoon of oyster sauce
- Salt and pepper to taste (For salt, start with 1/2 teaspoon and incrementally add if you want it to be saltier.)

Prepare and Cut Upo
- Peel the Upo, ensure you don't peel too much of the flesh, the Upo is very easy to peel.
- Slice off the bottom and top of Upo. Then divide the Upo in half lengthwise.
- Scoop out the seeds of the Upo, carefully not removing too much of the flesh. Note: Depending on you preference you can leave the seeds if they are tender.
- Chop the Upo in small 1/2-inch cubes.

- Wash the onion under cold water, then cut the onion in half.
- Peel the onion by pulling off the outer layer(s) of each half.
- Chop the onions into approximately 3/8-inch chunks. (Many techniques can be used, but cutting each half into 3/8-inch slices, then changing the direction of the onion by 90 degrees and cutting again is an efficient method of chopping the onion.

- Separate the garlic cloves and peel the loose outer layers
- Smash one clove at a time with side of large chef's knife.
- Remove outer layer for each smashed clove.
