You just coat the chicken with egg wash and breadcrumbs then deep fry. Afterwards, mix it all up into the delicious and spicy sauce. It is made with Sriracha sauce and a lot of spices. The spiciness of the sauce may vary to your preference. If you don’t want it to be too spicy, you can definitely adjust the amount of sriracha sauce you put in. The sriracha sauce is the one who puts a good spiciness and hotness to your chicken tenders. It is a hot sauce originated in Thailand made from paste of chili peppers, vinegar, garlic, sugar and salt. This sauce is just moderately spicy, unlike the tabasco and cayenne pepper.

Make sure to secure a good quality chicken tenderloins from the market. You may get confused to what exactly part of the chicken it is, it is the long, innermost muscle of the breast lying along the breastbone. It is the most tender meat of the chicken. Make sure to buy a good quality chicken. Fresh chicken should have a pinkish color, avoid chicken with gray or green because this is a sign of spoilage. You can buy them fresh in the market or in mall supermarkets. Either its cut already or you can buy a whole chicken.

Other main ingredient of this dish is the Sriracha sauce, a hot chili Thai sauce that is the main ingredient in making the sauce for our chicken tenders. It is made of red jalapeno peppers and some spices. Though this sauce goes well with everything, you could be having a difficult time looking for the availability of this sauce as it is not that common. You can use alternative like chili garlic sauce or sambal oelek.

  • You may be pronouncing it wrong! At first, we may have pronounced it the same, but not until I learned that sriracha should be read as “see-rat-cha”.

  • The sriracha sauce lose half of its spiciness during the process of making the sauce. Which makes it moderately spicy only.

  • The name came from a little town of Thailand called Si Racha.

  • You can use panko breadcrumbs in coating the chicken since it healthier because it is lower in calories and contains lesser sodium than other breadcrumbs.

  • You can store raw chicken in the fridge for 2-3 days. No need to get it frozen.

  • Cooked chicken can last 3-4 days in the fridge.

Ingredients

  • 1 pound chicken breast tenderloins
  • 1 egg
  • 2 cups breadcrumbs
  • 1/2 tbsp chili powder
  • 2 cups cooking oil
  • 3 cloves garlic, minced
  • 2 tbsp brown sugar
  • 1/3 cup soy sauce
  • 1 1/2 tbsp Sriracha hot sauce (could vary according to your hotness preference)
  • 1 tsp creamy peanut butter
  • 1 inch ginger, grated
  • 2 tbsp water
  • 1 tbsp cornstarch
  • 4 strands green onions

Directions

  1. Prepare the chicken cuts, breadcrumbs seasoned with chili powder and egg. Dip the chicken in egg, then into the breadcrumbs. You can repeat this process twice to completely coat the chicken.

  2. Heat the oil in a frying skillet. Then place the chicken tenders in the heated oil. Fry for 3-4 minutes in each side. Remove from the skillet and place in plate with paper towel to remove excess oil and set aside.

  3. To make the sauce. In a small bowl, combine the garlic, brown sugar, soy sauce, sriracha hot sauce, peanut butter, half of the chopped green onions, water and cornstarch. Stir very well.

  4. Heat a frying pan over medium heat. Pour the sauce mixture and stir to combine completely. Bring to a boil while stirring occasionally. Reduce the heat to low and simmer until the sauce thickens and your reach your desired consistency. Not too thick not too watery.

  5. The add the fried chicken tenders into the sauce. Make sure all chicken tenders are completely coated.

  6. Serve hot and garnish with the remaining chopped green onions.
