Ingredients

  • 20-25 pieces medium sized okra
  • 3/4 cup of oil
  • 2/3 cup of flour
  • 1/3 cup of cornstarch
  • 2 large eggs
  • salt and pepper to taste

Directions

  1. In a bowl, mix the flour and cornstarch.

    Add salt and pepper into the mixture then set aside.

  2. Slice the okra into your small sizes (suggested cut is 1/2 inch).

    Beat 2 eggs in a small bowl.

  3. Dip the sliced okra to the beaten eggs then dredge it to the flour mixture to coat. Make sure to coat evenly on all sides.

  4. Heat oil in a skillet. Once heated, carefully add the okra and cook until it's golden brown.

    (Tip: After removing Okra from pan place on a paper towel covered plate to remove excess oil, usually two paper towels do the trick.)
