Tips and Tricks When Making Banana Muffins

  • Use ripe bananas. I personally like my bananas slightly speckled with brown spots because it will mean a ripe, and sweeter flavor. In addition to that, it is also easier to mash when it's ripe enough.

  • Avoid overmixing the batter as it can lead to a dense muffin. Just mix it enough until all ingredients are combined.

  • To verify that the banana muffins are fully cooked, you may try the toothpick method. Just insert a clean unused toothpick into the center of the muffin and if it comes out clean, it means your muffins are already cooked and ready.

  • If you are a fan of nuts, you can add nuts as a topping for this muffin, it will go well with this recipe. You can also use chocolate chips as toppings, whatever topping you prefer, it is very flexible.

Ingredients

  • 2 1/2 cup all-purpose flour
  • 3 tbsp baking powder
  • 1 1/2 tbsp baking soda
  • 1 tsp iodized salt
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/3 cup cooking oil
  • 2 medium sized egg
  • 1 tbsp vanilla essence
  • 4 ripe bananas, mashed

Directions

  1. Preheat the oven to 180° Celsius (356° Fahrenheit)

    In a mixing bowl, combine all dry ingredients: all-purpose flour, baking powder, baking soda, sugar and salt. Then set aside.

  2. In another mixing bowl, combine the wet ingredients like oil, eggs, vanilla essence and the mashed bananas. Combine the dry ingredients to the wet ingredients and mix thoroughly until the mixture is combined completely.

  3. Put the muffin cups in the muffin pan. Scoop the batter mixture into each of the muffin cups until 3/4 full. Check if your oven is already at 180°C (356°F). Bake for 20-25 minutes.

  4. You can use a toothpick and insert at the center of the muffin, if it comes out clean, the muffins are done. Serve and enjoy!
